Creamed Chicken and Mushrooms (from Fannie Farmer Cookbook, 12th ed.) 4 tbsp. butter 12 mushrooms, sliced 2 cups cubed cooked chicken (about 2 chicken breasts) 4 tbsp. flour 2 cups chicken broth 1/8 tsp. cayenne pepper 4 tbsp. sherry salt to taste [mashed potatoes if you want them] [Peel and set the potatoes to boil if you're having them. Then either poach or sauté the chicken breasts and cut into cubes.] Melt butter in a large saucepan. Add mushrooms and chicken and cook 3 minutes. Stir in flour and cook 2 minutes. Gradually add broth and simmer 10 minutes. [Mash the potatoes.] Add cayenne pepper, sherry, salt, and heat through.
