Citrus-Tarragon Roasted Salmon
(from Pantry Raid)

1 tbsp. orange juice concentrate
1 tbsp. sherry (dry)
1/4 tsp. dried tarragon (or 1/2 tbsp. fresh)
1 tsp. melted butter
1/8 tsp. each salt & pepper
1 clove minced garlic
2 salmon fillets (2 lbs.), boned and skin removed

Combine orange juice concentrate, sherry, tarragon, butter, salt, pepper and garlic in a large bowl and brush over fish. Marinate 1-4 hours.

Preheat oven to 425 F and place fish on a buttered baking sheet. Brush evenly with the marinade. Cook 8-10 minutes.
